Robert Pickess - Restaurant Manager

Robert was born in Great Baddow, August 1981. Attended Baddow Hall Infant & Junior School, moving on to Great Baddow High School for his Secondary Education.

Robert's catering background started when he was just 14. He entered Sainsbury's Future Cooks and Junior Master Chef. Following this desire he completed his work experience at another local restaurant where he decided that catering was the career for him.

He was lucky to be accepted at Colchester Institute, where he obtained his NVQ level 2 in Craft Catering and a NVQ level 3 in Restaurant Management.

Once he completed his course at Colchester Robert did his work placement at a Country House Hotel in St Andrews, Scotland.


It was after this that Robert joined Russells in the October of 2000 and started as a Trainee Restaurant Manager.

Over the next few years he was promoted to Restaurant Manager. Robert takes great pride in the service he and his staff offer to guests at the Restaurant.

 During his time at Russells he has gained his Personal Liquor License, been fully Fire Trained and First Aid Qualified.


In his spare time he runs a Local Beaver and helps a Brownie Unit, which he really enjoys, attending their annual camps where he gives up his holiday time to cook for them.

During the summers of 2005 and 2007 he headed up the Staff Catering Team for the European Jamboree and the 21st World Scout Jamboree, both held at Hylands Park. This entailed managing the catering contract to feed 42,000 staff, leaders, scouts and guides from around the world. They had to deal with 19 different dietary requirements around the site. These are some of the food quantities they used. The list of goods supplied during the Jamboree was mind-boggling and included 343,000 litres of milk; 220,000 litres of fruit juice; 27 tonnes of chips; 280 tonnes of meat and meat products; 34 tonnes of fresh tomatoes and 4830 litres of fruit yoghurt. This was a huge challenge and achievement for him and he thoroughly enjoyed the whole experience.


As you can imagine this has given him an enormous amount of added experience and confidence.

He continues to enjoy working for Russells and looks forward to working there for many more years to come.
